Since it's for pve, SL doesn't matter, so level as high as you want, but generally never level Dex above 45 (40 gives you the dmg, 45 gives you max casting speed, so most Dex builds are actually Dex/pyro builds), and most stop leveling Strength at 40.

Lorian's Greatsword is a pretty dope strength/pyro build, but you get it quite late-game. The Demon's Greataxe is a bit worse imo but you can get it earlier. As for pyromancies, Great Chaos and Black Fire Orb (for enemies weak to fire/dark). Black Serpent and Warmth are good for PvP
